Arepa Breakfast Sandwich

• In a nonstick skillet, heat a little olive oil. Add onions and tomatoes, and cook until onions are translucent.
• Add the beaten eggs to the skillet and scramble gently. Set aside.
• On a griddle or the same skillet, sear the Hatfield® Sausage Patties on both sides. Set aside.
• Toast the English muffins.

To assemble:

• Place the seared Hatfield® Sausage Patty on the bottom half of the English muffin.
• Add the scrambled eggs and slices of avocado.
• Top with the other half of the English muffin, and enjoy your Hatfield® Sausage Patty huevos a la Mexicana sandwich.
