BACON BREAKFAST PIZZA
Ingredients:
- 8 slices bacon, cut into 1-inch pieces
- 1 pizza round crust
- 1½ Tbsp. olive oil
- 2 cloves garlic, minced
- 8 ounces fresh mozzarella, sliced
- 3 scallions, thinly sliced
- 3 large eggs
- Salt and pepper, to taste
- 2 Tbsp. fresh chopped parsley
- ¼ tsp. crushed red pepper flakes
Preparation:
- Preheat 450 F. Lightly coat a baking sheet or pizza pan with olive oil.
- Heat a medium saute pan over medium-high heat. Add bacon and cook until golden but not crispy, about 3-4 minutes. Drain fat and set bacon pieces aside.
- Brush pizza dough with olive oil and garlic. Top with mozzarella, bacon and scallions, leaving enough room for 3 eggs.
- Place in the oven and bake until edges begin to brown, 6-8 minutes. Remove from oven. Add eggs, gently cracking the eggs and keeping yolk intact.
- Place back in the oven and bake until egg whites have set and crust is golden brown, an additional 8 minutes. Garnish with parsley and red pepper flakes.
