BETTER THAN PIZZA PASTA- HEALTHIER VERSION
Ingredients:
3 ½ pounds pork sausage crumbles
1 cup onion, finely chopped
1 cup fresh parsley, washed, finely chopped
1 ½ Tbsp thyme dried
1 ½ Tbsp basil dried
2 Tbsp oregano dried
2 Tbsp garlic minced
3 pounds rotini wheat pasta
3 quarts pizza sauce
10 ounces Parmesan cheese, low fat shredded
2 cups green peppers, washed and diced
1 ½ cups sliced black olives
2 pounds mozzarella cheese, low fat shredded
Preparation:
Sauté pork, onion, parsley, spices and garlic in a large sauté pan distributing seasoning throughout the crumbles to blend flavors.
Cook pasta according to package Directions.
Drain the pasta in a colander and rinse with cold water. Drain well.
In a large bowl combine the pasta and pork mixture
Add the pizza sauce and parmesan cheese to the pasta mixture. Stir gently to distribute ingredients.
Spoon in a hotel pan with nonstick cooking spray.
Top with pepper and olives.
Sprinkle with the mozzarella cheese.
Place into a convection oven preheated to 350°F.
Bake approximately 35 minutes.
Hold at 140°F or higher to serve.
