CHORIZO MEATBALLS WITH QUESO CHEESE SAUCE

Chorizo Meatballs with Queso Sauce

Ingredients:

Meatballs

1 lb. Hatfield® Chorizo Sausage
1 lb. Hatfield® Ground Pork
2 eggs Slightly Beaten
1Tablespoon Ground Cumin
1 Teaspoon Paprika
1 Heavy Teaspoon Garlic Powder
1 ½ Cups Breadcrumbs
½ to ¾ Cup Chicken Stock for blending
1 Cup Chicken Stock for baking

Sauce

2 Cups Queso Cheese Sauce
¾ Cup Mild or Medium Chunky Salsa
Blend together

Preparation:

Lightly mix all ingredients except Breadcrumbs and Chicken Broth.
Add Breadcrumbs and Chicken Stock until fully Blended.
Refrigerate for at least 10 minutes before making meatballs to firm them up.
Roll into 1oz balls and place on baking sheet.
Add Chicken Stock and bake at 350 degrees for about 25-30 minutes.
Transfer to a deep baking pan and pour sauce over top.
Place back in oven until sauce is hot, 10-15 minutes.
Serve as an appetizer.
