CHORIZO MEATBALLS WITH QUESO CHEESE SAUCE

Ingredients:

Meatballs

  • 1 lb. Hatfield® Chorizo Sausage
  • 1 lb. Hatfield® Ground Pork
  • 2 eggs Slightly Beaten
  • 1Tablespoon Ground Cumin
  • 1 Teaspoon Paprika
  • 1 Heavy Teaspoon Garlic Powder
  • 1 ½ Cups Breadcrumbs
  • ½ to ¾ Cup Chicken Stock for blending
  • 1 Cup Chicken Stock for baking

Sauce

  • 2 Cups Queso Cheese Sauce
  • ¾ Cup Mild or Medium Chunky Salsa
  • Blend together

Preparation:

  • Lightly mix all ingredients except Breadcrumbs and Chicken Broth.
  • Add Breadcrumbs and Chicken Stock until fully Blended.
  • Refrigerate for at least 10 minutes before making meatballs to firm them up.
  • Roll into 1oz balls and place on baking sheet.
  • Add Chicken Stock and bake at 350 degrees for about 25-30 minutes.
  • Transfer to a deep baking pan and pour sauce over top.
  • Place back in oven until sauce is hot, 10-15 minutes.
  • Serve as an appetizer.
