GOURMET BREAKFAST SANDWICH WITH SAUSAGE PATTY

Ingredients:

1 brioche bun
1 Tbsp. butter
2 slices havarti cheese
2 fried eggs
1 sausage patty
2 Tbsp. sun-dried tomatoes, chopped
½ cup fresh spinach
2 Tbsp. pesto

Preparation:

Heat a medium nonstick saute pan over medium-low heat. Melt butter in pan, and cook the eggs. Remove from pan and heat the fully cooked sausage until heated through.

To assemble sandwich:
Spread pesto on each side of the bun, then one slice of cheese on each side, then top with sausage patty, eggs, spinach and sun-dried tomatoes.

Serve with side of fresh fruit or hash browns.
