In a small sauce pan, heat oil over medium heat add the onions and garlic. Cook until onions are translucent. Then add the cilantro, cumin, coconut milk, honey and peanut butter. Cook and stir until peanut butter has melted. Add the lime juice and combine.
Generously brush the skewers with the sauce. Place on the grill for 5 minutes; turn and grill 5 minutes more, brushing with more sauce. Serve over greens and additional sauce on the side.
