GRILLED PORK RIB EYE WITH CHIMICHURRI
Ingredients:
4 Premium Reserve® Rib Eye
1 Tbsp olive oil
Chimichurri:
1 cup fresh flat –leaf parsley
1 cup fresh cilantro
1/3 cup extra virgin olive oil
¼ small red pepper, seeded & coarsely chopped
3 cloves garlic, coarsely chopped
2 Tbsp coarsely chopped yellow onion
½ tsp dried oregano
¼ tsp red pepper flakes
1 tsp salt
3 Tbsp sherry vinegar
Preparation:
Brush each side of the rib eye with oil and place on grill. Cook to desired temperature (145°-160°F). Remove and keep warm.
For chimichurri: place all ingredients in food processor and pulse until finely chopped and NOT pureed.
