ITALIAN SAUSAGE FRITTATA
Ingredients:
1 Tbsp. olive oil
½ lb. bulk sweet Italian sausage
½ c fontina cheese, grated
¼ c onion, chopped
¼ c roasted red pepper, julienned
1 c fresh spinach, chopped
1 c cherry tomatoes, halved
6 eggs
½ c milk
Salt and pepper, to taste
Preparation:
Preheat oven to 350°F.
In a sauté pan, over medium high heat add the oil; then the pork and cook until no longer pink.
Add the onion, and cook until translucent; add the spinach, roasted red peppers, eggs, cheese, season with salt and pepper.
Spread the tomatoes evenly over the top and place in preheated oven. Bake for 18-20 minutes until completely set.
Serve warm with salad or fresh fruit.
