ITALIAN SAUSAGE SKILLET
Ingredients:
2 Tbsp. olive oil
1 lb. bulk Italian sausage, hot or sweet
1 medium onion, chopped
1 garlic clove, sliced
1 medium zucchini, chopped
1 medium yellow squash, chopped
1 medium red pepper, chopped
1 can diced tomatoes, drained
Salt and pepper, to taste
Crushed red pepper, (optional)
Grated parmesan (optional)
1 box pasta (optional), cook according to package directions
1 Egg – sunny side up (optional – for Brunch)
Preparation:
In a large sauté pan, heat oil over medium high heat.
Add the onions, garlic and sausage; cook until onions are translucent and sausage is no longer pink.
Add the zucchini, yellow squash, and red peppers, cook for 3-5 minutes until tender.
Add the diced tomatoes, salt, pepper and crushed red pepper for another 8 minutes.
Serve with pasta.
