Jian Bing (Chinese Crepe)

Jian Bing (Chinese Crepe)

Ingredients:

  • 4 ea Wonton Wrapper
  • As needed water (for wontons)
  • Cooking Oil, For Deep-frying

 

  • 3 tbsp All Purpose Flour
  • ¾ cup Water
  • 2 Egg
  • 1 teaspoon Toasted Sesame Seeds
  • 1 teaspoon Scallions (Finely Chopped)
  • 2 slices 2242 Hatfield Classic Ham
  • 1 tsp Cilantro (Finely Chopped)
  • 1 teaspoon Soybean Paste (Prepared)
  • 1 teaspoon Garlic Chilli Sauce (Prepared)

Preparation:

  • Heat oil to 360 F.
  • Brush a thin layer of water on a wonton wrapper. Stick another one on the top then use a rolling pin to press tight. With a knife, score two lines in the middle. Repeat with the other two wrappers.
  • Fry layered wrappers in oil on both sides until just light brown, set aside on a paper towel lined plate.
  • Stir together flour, water and 1 egg until a smooth batter is formed.
  • Heat a greased non-stick crepe/frying pan.
  • With ¼ cup of batter, add to pan, spreading in a thin layer to make a crepe.
  • When the batter is no longer runny, crack the other egg on top. Break the yolk and spread over the crepe and sprinkle with sesame seeds and scallions.
  • When the crepe becomes firm and slides easily in the pan, carefully flip, then remove from heat.
  • Spread soy bean paste and chili garlic sauce over the crepe
  • Add the ham, cilantro and wonton crackers.
  • Fold the crepe into envelope shape. Serve
