LOADED FRIES WITH ANDOUILLE SAUSAGE GRAVY
Ingredients:
- 2 c. Sweet Potato Fries or Regular fries
- 2 Tbsp. unsalted butter
- 1 c. andouille sausage, diced
- 1/3 c. red pepper, diced
- 1/3 c. onion, diced
- 1 Tbsp. garlic, minced
- 2 Tbsp. flour
- 1 c. chicken stock
- Sriracha, dash
- Salt and pepper, to taste
- ½ c. pimento cheese
- Scallions, garnish
Preparation:
- Deep fry or bake fries (425°F)
- In a sauce pan, add butter; until melted. Add the diced andouille, onions, peppers and garlic. Cook for 5-7 minutes until onions are translucent and peppers are soft.
- Add the flour and cook for 2 minutes; then the chicken stock and sriracha. Bring to a simmer until gravy begins to thicken. Season with salt and pepper.
- Service: Fries, pimento cheese and sausage gravy. Garnish with scallions.
