MEXICAN HAM, EGG & CHEESE TOSTADA WITH PICO DE GALLO
MEXICAN HAM, EGG & CHEESE TOSTADA WITH PICO DE GALLO
Ingredients:
- ½ cup vegetable oil
- 8 corn tortillas
- 1 cup tomatoes, chopped
- ½ cup onion, finely chopped
- 2 jalapeños, finely chopped
- 3 Tbsp. vinegar
- 1 Tbsp. lime juice
- Salt & pepper, to taste
- 1 cup refried beans
- 16 slices ham
- 2 cups shredded lettuce
- 1 cup sour cream (optional)
- 1 cup queso fresco
- 8 eggs (fried or sunny side up)
- ½ cup cilantro leaves.
Preparation:
- In a frying pan with oil, fry the tortillas until golden brown. Remove excess grease with a paper towel.
Pico de gallo:
- Combine tomatoes, onions, jalapeños, vinegar, lime juice, salt and pepper.
To assemble: Spread refried beans on tostado, then lettuce, ham, egg, pico de gallo, top with queso fresco and fresh cilantro leaves.
