Morning Shakshuka
Ingredients:
- 1 tbsp Extra Virgin Olive Oil
- ¼ cup Yellow Onion (Chopped)
- ¼ cup Bell Pepper (tri-color, chopped) 2 tbsp Garlic (Chopped)
- 1 pinch Ground Coriander
- 1 pinch Sweet Paprika
- ½ pinch Ground Cumin
- ½ pinch Red Pepper Flakes
- ½ pinch Salt And Pepper
- 2 cup Tomato (chopped)
- ¼ cup Tomato Sauce
- 2 Eggs
- 1 pinch Parsley (Chopped)
- 1 pinch Mint (Chopped )
- 3 each 3641 Hatfield All-Natural Skinless Sausage Links (Cooked)
- Side of Bread (Pita or Challah)
Preparation:
- Heat the oil in a large cast iron skillet. Add the onions, green peppers, garlic, and spices. Cook, stirring occasionally, until the vegetables have softened, about 5 minutes.
- Add the tomatoes and tomato sauce. Cover and let simmer for about 15 minutes. Remove cover and cook a bit longer to allow the mixture to reduce and thicken. Taste and adjust the seasoning as needed.
- Using a wooden spoon, make 2 indentations, or “wells,” in the tomato mixture (make sure the indentations are spaced out). Gently crack an egg into each well.
- Reduce the heat, cover the skillet, and cook on low until the egg whites are set.
- Remove cover and add the fresh parsley and mint.
- Serve with bread.
