MUSSELS WITH CHORIZO, HERBS AND WHITE BEANS IN A WHITE WINE GARLIC SAUCE
Ingredients:
- 1 lb. PEI mussels, clean and debearded
- 3 cloves, fresh garlic, minced
- 1 lb. Hatfield® Chorizo Sausage
- Fresh parsley, chopped
- Fresh cilantro, chopped
- 15 oz. Cannellini beans, drained and rinsed
- ¼ cup white wine
- ¼ cup chicken stock
- 1 tbsp. butter
- Salt and pepper, to taste
Preparation:
- In a large saute pan, over medium high heat cook the chorizo for 6-8 minutes until it begins to brown. Add the garlic and mussels.
- Cover and check after 3 minutes to see if mussels begin to open; then add the beans, wine, stock, parsley and cilantro.
- Cook until all mussels have open and add butter, salt and pepper. Toss and serve with grilled sliced baguette.
