MUSTARD HERB RUBBED PORK ROAST

Ingredients:
- 1 – 6 lb boneless ribeye roast
- Salt
- Pepper
Rub:
- 6 Tbsp whole grain mustard
- 4 Tbsp minced garlic
- 2 Tbsp olive oil
- 2 Tbsp balsamic vinegar
- 1 Tbsp chopped fresh rosemary
- 1 Tbsp chopped fresh basil
- 1 Tbsp fresh thyme
- 1 Tbsp Worcestershire sauce
Preparation:
- Preheat oven to 375°F.
- Combine whole grain mustard, garlic, olive oil, balsamic, rosemary, basil, thyme and Worcestershire sauce, and whisk to blend.
- Sprinkle pork with salt and pepper. Spread mustard rub mixture all over pork. Place pork in a baking dish. Roast pork until thermometer inserted into the thickest part reads 145-150°F, approximately 2 hours. Let stand for 15 minutes. Slice pork thinly and serve.
