PEACH, WATERMELON AND JALAPENO SALSA SERVED ON PULLED PORK STREET TACOS

Ingredients:
For the Tacos
- 1 Farm Promise® Pork Butt
- 3 Tbsp. Kosher salt
- 1 medium onion, diced
- 1 Tbsp. minced garlic
- 2 limes, juiced
- 1 Tbsp. chili powder
- 1 tsp. dried oregano
- 1 tsp. cumin
- 36oz chicken broth
- 1 pack 6″ floured tortillas
For the Salsa
- 2 c watermelon, small dice
- 1 c fresh peaches, small dice
- ¼ c red onion, diced
- 2 jalapeno peppers, seeded and finely chopped
- 2 Tbsp. fresh chopped cilantro
- ½ tsp salt
- 2 limes, juice and zest
Preparation:
- Preheat oven to 375°F.
FOR TACOS
- Combine salt, chili powder, oregano and cumin in a bowl.
- Rub over the entire pork butt, place in roasting pan.
- Pour lime juice, garlic over the pork and diced onions around with chicken broth.
- Roast for 4-5 hours until internal temperature reaches 195°F.
- Allow to rest before pulling apart.
FOR SALSA
- Combine all ingredients for the salsa in a medium bowl.
- To assemble, place pulled pork in floured tortilla and salsa on top.
- Enjoy with your favorite side.
