PEACH, WATERMELON AND JALAPENO SALSA SERVED ON PULLED PORK STREET TACOS

Ingredients:

For the Tacos

  • 1 Farm Promise® Pork Butt
  • 3 Tbsp. Kosher salt
  • 1 medium onion, diced
  • 1 Tbsp. minced garlic
  • 2 limes, juiced
  • 1 Tbsp. chili powder
  • 1 tsp. dried oregano
  • 1 tsp. cumin
  • 36oz chicken broth
  • 1 pack 6″ floured tortillas

For the Salsa

  • 2 c watermelon, small dice
  • 1 c fresh peaches, small dice
  • ¼ c red onion, diced
  • 2 jalapeno peppers, seeded and finely chopped
  • 2 Tbsp. fresh chopped cilantro
  • ½ tsp salt
  • 2 limes, juice and zest

Preparation:

  • Preheat oven to 375°F.

FOR TACOS

  • Combine salt, chili powder, oregano and cumin in a bowl.
  • Rub over the entire pork butt, place in roasting pan.
  • Pour lime juice, garlic over the pork and diced onions around with chicken broth.
  • Roast for 4-5 hours until internal temperature reaches 195°F.
  • Allow to rest before pulling apart.

FOR SALSA

  • Combine all ingredients for the salsa in a medium bowl.
  • To assemble, place pulled pork in floured tortilla and salsa on top.
  • Enjoy with your favorite side.
