PORK PARMESAN
Ingredients:
1 – 14oz Premium Reserve® Pork Flat Iron (butterflied, flattened to ¼ inch thickness)
½ cup flour
1 large egg, lightly beaten
1 cup seasoned breadcrumbs
½ cup olive oil
1 Tbsp chopped fresh basil
2 oz marinara sauce
1 cup shredded mozzarella
¼ cup grated Parmesan cheese
Preparation:
Combine flour, salt and pepper in a shallow bowl. Dredge pork in flour mixture, dip in egg and dredge in breadcrumbs.
In a medium sauté pan heat oil on medium high heat. Sauté pork 2 minutes on each side or until golden.
Place pork on sizzle pan. Top with sauce, basil, shredded mozzarella and parmesan cheese.
Bake in a 375°F oven for 20 minutes or until cheese is melted and light brown.
