PORK PARMESAN
Ingredients:
- 1 – 14oz Premium Reserve® Pork Flat Iron (butterflied, flattened to ¼ inch thickness)
- ½ cup flour
- 1 large egg, lightly beaten
- 1 cup seasoned breadcrumbs
- ½ cup olive oil
- 1 Tbsp chopped fresh basil
- 2 oz marinara sauce
- 1 cup shredded mozzarella
- ¼ cup grated Parmesan cheese
Preparation:
- Combine flour, salt and pepper in a shallow bowl. Dredge pork in flour mixture, dip in egg and dredge in breadcrumbs.
- In a medium sauté pan heat oil on medium high heat. Sauté pork 2 minutes on each side or until golden.
- Place pork on sizzle pan. Top with sauce, basil, shredded mozzarella and parmesan cheese.
- Bake in a 375°F oven for 20 minutes or until cheese is melted and light brown.
