PORK SAIGON SANDWICH
Ingredients:
2 French Baguettes
1 Premium Reserve® Pork Tenderloin (cooked, cooled and sliced)
1 carrot (grated)
1 Thai pepper (chopped)
1 English cucumber (peeled and julienned)
1 bunch cilantro (chopped)
1 shallot (chopped and sautéed )
1 Tbsp fresh lime juice
1 Tbsp sugar
3 Tbsp Nuoc Mam (Fish Sauce)
2 Tbsp Sriracha
Preparation:
Roast pork tenderloin for 30 – 35 minutes in a 350°F oven until internal temperature reaches 145°F at the thickest part. Once cooked, cool and slice.
Slice baguette open, put in pork, sautéed shallots.
In a mixing bowl, combine carrots, Thai pepper, cucumber and cilantro.
Put in baguette with pork.
Sauce: combine sriracha, lime juice, sugar and fish sauce until sugar dissolves.
Drizzle sauce on the sandwich.
