PORK SAIGON SANDWICH
Ingredients:
- 2 French Baguettes
- 1 Premium Reserve® Pork Tenderloin (cooked, cooled and sliced)
- 1 carrot (grated)
- 1 Thai pepper (chopped)
- 1 English cucumber (peeled and julienned)
- 1 bunch cilantro (chopped)
- 1 shallot (chopped and sautéed )
- 1 Tbsp fresh lime juice
- 1 Tbsp sugar
- 3 Tbsp Nuoc Mam (Fish Sauce)
- 2 Tbsp Sriracha
Preparation:
- Roast pork tenderloin for 30 – 35 minutes in a 350°F oven until internal temperature reaches 145°F at the thickest part. Once cooked, cool and slice.
- Slice baguette open, put in pork, sautéed shallots.
- In a mixing bowl, combine carrots, Thai pepper, cucumber and cilantro.
- Put in baguette with pork.
- Sauce: combine sriracha, lime juice, sugar and fish sauce until sugar dissolves.
- Drizzle sauce on the sandwich.
