Pork Tenderloin wrapped in Honey Cured Bacon
Ingredients:
6 slices Heritage By Hatfield® Honey Cured Bacon
2 – 2 ½lb pork tenderloin
2 Tbsp. olive oil
Preparation:
- Preheat oven to 375 degrees.
- On a cutting board lay out 6 slices of bacon overlapping.
- Place tenderloin across the bacon and wrap tightly, overlapping the bacon as needed. Secure with toothpick, wooden skewers or kitchen twine, if needed.
- In a large saute pan over medium-high heat, place the bacon wrapped tenderloin in the pan
and sear for 2-3 minutes per side, turning carefully until the bacon begins to brown. - Place saute pan in preheated oven and roast for approximately 25 minutes or until the
thickest part reaches an internal temperature of 145°F. - Remove from the oven and let rest on the cutting board before slicing.
