Jackfruit BBQ Sauce

• In a medium saucepan, add jackfruit syrup and reduce to a third, then add jackfruit, chili and vinegar.
• Bring to a boil and then transfer the contents to a blender.
• Blend until smooth and add salt to taste.

Papaya Salad

• Mix all ingredients and dress with jackfruit barbecue sauce.
• Let salad rest for 20 minutes before serving.

Coconut White Rice

• Rinse rice very well, until clean, then transfer to a pot.
• Add water, coconut milk and salt, bring to a boil, and cover. Turn the heat to low and simmer for 10 minutes.
• Turn the heat off and let the rice rest for another 10 minutes. Fluff the rice with a fork and add nuts.
