Pumpkin Spiced Bacon Bread Pudding

Pumpkin Spice Bread Pudding

Ingredients:

6 cups stale bread (brioche or French, cubed)
6–8 slices thick-cut pumpkin spiced bacon, cooked crisp & chopped
4 eggs
2 cups whole milk
1 cup heavy cream
½ cup sugar
1 tsp vanilla extract
Pinch of salt

Preparation:

Preheat oven to 350°F (175°C). Grease a skillet.
Spread bread cubes in the dish. Mix chopped bacon evenly.
In a bowl, whisk together eggs, milk, cream, maple syrup, vanilla and salt.
Pour custard over the bread and bacon. Press bread gently to absorb liquid.
Let sit 15–30 minutes for soaking (or refrigerate overnight for more depth).
Bake uncovered 40–45 minutes, until golden and set in the center.
Cool slightly and serve warm — top with a drizzle of warm maple syrup.
