1 pound ground pork or sausage (chorizo, country, Italian)
4 eggs beaten
½ cup milk
2 cups shredded cheese (chef’s choice)
Preparation:
Preheat oven to 350 F. Spray muffin pan with cooking spray. Set aside.
In a medium saute pan over medium-high heat, add the oil and ground sausage or pork, cook for 8-10 minutes until browned and no longer pink. Remove and set aside.
In a medium mixing bowl, add the Bisquick, eggs, milk, pork and cheese. Mix all ingredients together.
Using a spoon or scoop; scoop into prepared muffin pan and place in the oven. Bake for 20-25 minutes until golden brown.
