SHRIMP AND CHORIZO BOWL
Ingredients:
2 Tbsp Olive Oil
1 large sweet onion, chopped
1 large red bell pepper, chopped
1 large green pepper, chopped
¼ cup shredded carrots
2 cloves garlic, minced
1 ½ cups cooked cold rice
8 oz Hatfield® chorizo sausage
1 lb raw 16-20 shrimp
2 cups chicken stock
1 chopped scallion
Preparation:
Heat oil in a large sauté pan over medium- high heat. Add chorizo; cook until browned about 10 minutes. Remove and set aside.
In the same pan, add onions, peppers, garlic and carrots. Cook for 3 minutes, stirring occasionally.
Add the shrimp and cook until pink. Stir in the chorizo, rice, pepper mixture and 1 cup of the chicken stock.
If it looks to moist, simmer an additional 2 minutes.
Serve in a bowl and garnish with scallions.
