SLOW ROASTED PIT HAM WITH POMEGRANATE AND FIG GLAZE
SLOW ROASTED PIT HAM WITH POMEGRANATE AND FIG GLAZE
Ingredients:
- 1 Pit Ham
- 2 cups Pomegranate Juice
- 1 cup Brown Sugar
- 1 ½ cups Mission Figs (quartered)
- 2 Tbsp corn starch
- 1 ½ oz water
Preparation:
- Slow roast the ham for 2-3 hours in a 325°F oven.
- While ham is baking, bring the pomegranate juice to a simmer, whisk in brown sugar.
- Once sugar is dissolved, mix in the figs and cook for 10 minutes.
- Bring to a boil, in a small mixing bowl combine corn starch and cold water. Whisk till consistency of heavy cream.
- Slowly whisk in the corn starch slurry in the boiling glaze, this will thicken the glaze.
- Add to the protein the last, 5-10 minutes of roasting. The sugars will cook quickly and caramelize.
