SMOKED PORK LOIN SANDWICH WITH APPLE SLAW, PICKLED RED ONION AND WHOLE GRAIN MUSTARD APRICOT AIOLI ON A PRETZEL ROLL
Ingredients:
- 4- 5 oz. portions sliced smoked pork loin (boneless)
- 4 pretzel rolls
- 12 oz. slaw mix
- 1 granny smith apple, cored, julienned
- 3 green onions, sliced
- ½ cup apple cider vinegar
- 2 Tbsp. sugar
- ¼ cup olive oil
- 1 tsp. Dijon mustard
- Salt and pepper, to taste
- 2 Tbsp. whole grain mustard
- 1 Tbsp. apricot jam
- ¼ cup mayonnaise
Preparation:
- Combine slaw mix, apples together. In a separate bowl, combine apple cider vinegar, sugar, mustard, olive oil, salt and pepper. Add dressing to slaw mix and combine. Set aside.
- In a small bowl, whisk together whole grain mustard, jam and mayo. Set aside.
- To assemble sandwich: slice pretzel roll, spread aioli mixture on top and bottom of the roll, then place smoked slice pork loin on the roll and top with slaw mix. Serve with your favorite side.
