SWEET ITALIAN SAUSAGE BRUSSELS SPROUT BOWL DRIZZLED WITH WHOLE GRAIN HONEY MUSTARD
Ingredients:
- 1 lb. Sweet or Hot Italian sausage links
- 1 lb. Brussels sprout, halved
- 1 lb. Yukon Gold Potatoes, small/halved
- 2 Tbsp. olive oil
- 2 Tbsp. whole grain mustard
- 1 ½ tsp. honey or agave
- Salt and pepper, to taste
Preparation:
- Preheat oven 375°F.
- In a small bowl, whisk together whole grain mustard and honey.
- Cut sausage into ½” pieces and place on a sheet pan.
- Cook for 8-12 minutes until browned; and internal temperature reaches 160°F. Once cooked set aside.
- Cut potatoes and brussel sprouts in half, toss with olive oil, salt and pepper.
- Spread mixture on a sheet pan.
- Roast for 25-30 minutes until sprouts and potatoes begin to brown and tender.
- Combine sausage and vegetable mixture; serve in bowls, drizzle with honey mustard sauce.
