SWEET POTATO BENEDICT WITH AVOCADO CREME

SWEET POTATO BENEDICT WITH AVOCADO CREME
Ingredients:
1 large sweet potato
2 Tbsp. Olive Oil
Smoked pork loin – 4oz sliced, boneless end
2 avocados- halved, pitted
1 c. Greek yogurt
2 Tbsp. garlic, minced
Juice of 2 limes and zest of one lime
Salt and pepper, to taste
Hot sauce (optional)
Eggs – poached
Preparation:
Slice smoked pork loin into 4 oz portions and heat through.
Preheat oven to 400°F.
Slice sweet potatoes into ¼ inch to ½- inch slices.
Lightly brush potato on each side with olive oil, place on baking sheet.
Bake for 30 minutes or until cooked through and slightly toasted.
To prepare avocado crème, in a blender, place avocado, yogurt, garlic, lime juice and zest and blend until smooth. Add salt and pepper.
Prepare eggs for poaching.
To assemble: place the sweet potato toast, then pork, the egg and top with a dollop of avocado crème.
Serve with fresh fruit or salad.
