SWEET POTATO WAFFLE WITH SAUSAGE PATTIES OR LINKS
Ingredients:
- 1 sweet potato (peeled and grated)
- 2 eggs
- ¼ tsp. cumin
- ¼ tsp. paprika
- ½ tsp. garlic minced
- Salt and pepper, to taste
- Oil/cooking spray
Preparation:
- In a medium bowl, combine the ingredients.
- Brush the waffle iron with oil or cooking spray.
- Ladle the sweet potato mix into the waffle iron. Cook for 4-5 minutes until golden brown.
- Serve with eggs, sausage and syrup.
