TUSCANY SAUSAGE SANDWICH
Ingredients:
- 4 – Italian Sausage Links
- 4 roasted red peppers
- 1 small onion, peeled and cut in half crosswise
- 2 tsp olive oil
- 1 bunch broccoli rabe, cooked
- 4 oz Marinara sauce
- 8 pieces sliced fresh mozzarella
- 4- (6inch) sandwich rolls
Preparation:
- Grill Sausage on medium-high heat until internal temperature reaches 160°F.
- Sauté onions in olive oil until caramelized about 6 minutes.
- To assemble, place sausage in roll, then roasted red peppers, broccoli rabe, marinara and fresh mozzarella.
- Place sandwich in 400°F for 5 minutes or until cheese is melted.
