WINTER MINESTRONE WITH ITALIAN SAUSAGE

WINTER MINESTRONE WITH ITALIAN SAUSAGE
Ingredients:
1 lb. bulk sausage, sweet or hot
3 Tbsp. Olive oil
2 celery ribs, chopped
2 medium carrots, chopped
1 leek, white part chopped
1 medium onion, chopped
1 cup butternut squash, cubed
1 medium zucchini, diced
1 c green bean, cut into ½- inch pieces
2 c shredded cabbage
2 c kale, chopped
2 c garbanzo beans
3 Tbsp. garlic, minced
2 c diced tomatoes
6 c chicken stock
1 tsp. dried basil
1 tsp. dried oregano
1/3 c shredded parmesan
Salt and pepper, to taste
Preparation:
In a large pot, heat 1 tablespoon of oil on medium high heat.
Add the sausage, cook until no longer pink, about 5-7 minutes. Remove and set aside.
Add the additional 2 tablespoons of oil, celery, garlic, carrots, onion and leeks; cook until vegetables become tender.
Then add the butternut squash, zucchini, green beans, cabbage, garbanzo beans, diced tomato; cook for another 10 minutes.
Add the kale, stock, oregano, basil and sausage, let simmer for another 30 minutes.
Season with salt and pepper. Top with parmesan cheese when ready to serve.
